Yes, blue tongue skinks can have beef, it is protein and they need protein in order to be healthy, you should be sure to cook the beef before you give it to them for the best results. The cooked beef shouldn't contain any spices or additives either because they aren't well equipped to digest such processed ingredients. (Source)

In addition to cooked beef, you can also feed cooked chicken, lamb, duck, venison and turkey.
